Timea Babos and Kristina Mladenovic have won the only previous meeting between the pairs. That came at the 2018 US Open.
Samantha Stosur and Zhang Shuai have won all of their nine matches since then.
Babos and Mladenovic are the defending champions, having beaten Ekaterina Makarova and Elena Vesnina, 6-4, 6-3, last year.
Only four partnerships have successfully defended the crown since the tournament moved to Melbourne Park. The latest was Sara Errani and Roberta Vinci in 2014.
Stosur is a two-time Grand Slam champion, having won the 2005 US Open and 2006 French Open in combination with Lisa Raymond.
The 34-year-old had two match points in this tournament during the 2006 final but alongside Raymond lost to Yan Zi and Zheng Jie, 2-6, 7-6(7), 6-3.
Since 1980, only two Australians have won this title: Rennae Stubbs in 2000 and Alicia Molik in 2005.
Zhang is the only one of the four players who has never reached a Grand Slam final.
